These chocolate-covered watermelon ladybugs are incredibly easy to make. Each bite offers a refreshing burst of watermelon encased in a smooth, velvety layer of chocolate. Tiny chocolate chips and edible eyes add an interesting texture and make these treats even more fun.

Here’s how you can make this easy recipe at home.

Ingredients:

  • 1/4th of a medium watermelon
  • 2/3 of a dark chocolate bar
  • 12 sugar eyes or white drops
  • 36 dark chocolate chips
  • Blueberries

Instructions

Step 1: Prepare the Watermelon

Slice the watermelon into slices. Remove the rinds and seeds. Using a heart-shaped cookie cutter, shape the future ladybugs. Blot the hearts in a towel to remove excess juice. Make sure to do this so that the chocolate does not slip off the watermelon.

Step 2

On the parchment, draw the outline of the hearts by tracing around the cutout. Flip the parchment over and lay it on the board. Melt the chocolate in a water bath.

Pour some chocolate into a syringe and draw the legs and outlines of our insects. Take your time, as the chocolate does not harden quickly.

Step 3

Dip the narrow part of the watermelon heart into the chocolate and place it on the contours.

Step 4

Arrange the eyes. Draw a stripe and drops. Place chips on top of the drops. Chill the treat in the refrigerator for 2 hours.

Step 5

Place the finished ladybugs on a chilled plate to serve and garnish with herbs and berries.

How to Choose the Right Watermelon

When choosing a watermelon for this recipe, opt for a juicy, ripe one. Large, oblong-shaped watermelons are ideal as they tend to have smaller seeds. Look for a watermelon weighing between 4 to 8 kilograms.

Avoid those with light spots, which may indicate they are not sweet enough. Instead, choose watermelons with a yellow spot, a sign of ripeness and sweetness.

When tapped, a ripe watermelon will have a hard, shiny rind and produce a moderate ringing sound. It should also feel slightly springy to the touch.
