Delicious Quiche: An easy breakfast for large families (recipe included)

Quiche is a delicious, quick, and easy meal that is perfect for breakfast or lunch. It is a great meal. It is similar to an omelet or a frittata. It makes a great make-ahead meal for a group or a large family, it reheats well, and it is filling and nutritious. I make Quiche whenever I know we are going to have a busy day or on days when I am cooking large meals for a family gathering. With Quiche, everyone can have something readily available to eat.

Why Quiche:

Quiche is nutritious, easy to make, and delicious. It is a timeless, no-fuss meal that is especially great to have around the house on busy days when everyone is home. Those days, like holidays or busy sports days, when the whole family is moving around and we don’t have time to share a breakfst meal.

It is great for breakfast or lunch, or even a high-protein snack. Quiche is excellent on the go. Just wrap a slice in wax paper and put it in a plastic sandwich bag.

Quiche also freezes well and can be ready from frozen in 35 minutes. Simply cook it all the way, let it cool, wrap it in aluminum foil, and put it in the freezer. To defrost, unwrap the quiche and place it in an oven at 375°F for 35 minutes or until warm throughout.

Ingredients:

  • Pie crust (homemade recipe included here)
  • 5 eggs
  • Whole milk
  • Filling- One meat, a veggie, and a type of cheese (see below)
  • Spices (pepper, salt, onion powder, garlic powder)

Different Filling Combinations:

For me, eggs and cheese go hand in hand. I rarely have eggs without some cheese mixed in. Most of the combinations I include below consist of a cheese, a meat, and a vegetable. If cheese or meat is not part of your everyday diet, feel free to leave them out and try different veggie combinations.

Listed below are just a few of the endless possible combinations. Anything that tastes delicious in an omelet will be great in a quiche.

  • Bacon, Spinach, Mozzarella
  • Bacon, Cheddar, Scallion
  • Ham, American, Asparagus
  • Sausage, Cheddar, Fennel
  • Spinach, Gruyère, Sauage

Directions:

  • Slice scallions (if using) and sauté in a pan with olive oil for about 2 minutes. Add spinach and season to taste. Sauté until just wilted. Let it cool and squeeze the liquid out of the spinach. set aside
  • In a mixing bowl, whisk together eggs and milk. Add your selection of meat, cheese, and the cool spinach. Gently combine and season to taste.
  • Roll the crust into a lightly greased pie pan. (see below for homemade recipe)
  • Pour ingredients into a pie pan with a rolled-out crust.
  • Cook at 375 degrees for 40-45 minutes
  • Let cool for 10 minutes

Directions for Pie Crust (makes two crusts):

  • Put flour, butter, and salt in the food processor. Pulse 5-8 times until the dough resembles a crumble.
  • Slowly add ice water and pulse until the dough begins to come together.
  • Empty the food processor contents onto a floured rolling mat and, with your hands, roll and combine the dough into a ball. Be careful not to over-handle the dough, as it will make the texture tough.
  • Split the dough into two balls and wrap in plastic
  • Refrigerate for at least one hour.

Ingredients
  

Spices
  • 1 tbsp olive oil
  • pepper to taste
  • salt to taste
  • garlic powder to taste
Filling
  • 1/2 cup fully cooked ham cubed
  • 1 cup whole milk
  • 1 cup fresh spinach
  • 1 scallion
  • 5 eggs
  • 1 cup shredded cheese colby Jack, Chedder or Mozzerella
Pie crust: If using homemade
  • 2 cups all purpose flour
  • 2 sticks unsalted butter cut in small pieces
  • ½ tsp salt
  • ¼ cup ice cold water

Pie Crust
  1. Put flour, butter and salt in the food processer with the chopping blade
  2. Pulse the food processor 5-8 times. Dough should look like it is beginning to crumble. Be careful not to pulse too many times, you don't want to melt the butter.
  3. Slowly add ice-cold water and pulse. Use as little water as possible to pull the dough together.
  4. Empty the food processor onto the floured rolling mat and with your hands ,roll the dough into a ball
  5. With a pastry cutter, split the dough in half, wrap separately in plastic and refrigerate for 45 minutes- one hour.
  6. roll out the pie crust on the rolling mat. For a 9 inch pie pan, roll the dough into a 10-inch. circle according to the mat measurements.
  7. Place the center of the circle of dough into a pie pan and pinch the edges to create the rolled edge.
Filling
  1. Slice scallions and saute for 2 minutes in saute pan until they become aromatic
  2. Add the spinach, season to taste with salt and pepper, and saute until just wilted.
  3. Let the spinach cool for about 5 minutes and then squeeze the liquid out of the cooked spinach
  4. In a medium sized bowl, crack and whisk the eggs. Add the milk, meat, spinach, and cheese. Season with salt, pepper, and garlic powder. Mix all the ingredients together and place the filling in the pie crust.
  5. Cook at 375 for 40-45 minutes or until a knife can come out of the filling clean. Let stand 5 minutes before serving.
