Pie Crust
- Put flour, butter and salt in the food processer with the chopping blade
- Pulse the food processor 5-8 times. Dough should look like it is beginning to crumble. Be careful not to pulse too many times, you don't want to melt the butter.
- Slowly add ice-cold water and pulse. Use as little water as possible to pull the dough together.
- Empty the food processor onto the floured rolling mat and with your hands ,roll the dough into a ball
- With a pastry cutter, split the dough in half, wrap separately in plastic and refrigerate for 45 minutes- one hour.
- roll out the pie crust on the rolling mat. For a 9 inch pie pan, roll the dough into a 10-inch. circle according to the mat measurements.
- Place the center of the circle of dough into a pie pan and pinch the edges to create the rolled edge.
Filling
- Slice scallions and saute for 2 minutes in saute pan until they become aromatic
- Add the spinach, season to taste with salt and pepper, and saute until just wilted.
- Let the spinach cool for about 5 minutes and then squeeze the liquid out of the cooked spinach
- In a medium sized bowl, crack and whisk the eggs. Add the milk, meat, spinach, and cheese. Season with salt, pepper, and garlic powder. Mix all the ingredients together and place the filling in the pie crust.
- Cook at 375 for 40-45 minutes or until a knife can come out of the filling clean. Let stand 5 minutes before serving.
